Amaranth, one of the most nutritious of the ancient grains, is also one of the most beautiful. Though many amaranths have been selected for yield and adaptation to local climate, some have also been bred to accentuate their ornamental qualities. Prized cultivars produce giant vertical spires, huge walls of colorful spikes, and, in the case of Coral Fountain, showy, cascading plumes.
